{"id":3769,"date":"2015-07-11T13:44:04","date_gmt":"2015-07-11T17:44:04","guid":{"rendered":"http:\/\/peoplesfood.coop\/?p=3769"},"modified":"2019-05-28T16:55:48","modified_gmt":"2019-05-28T20:55:48","slug":"rustic-gazpacho","status":"publish","type":"post","link":"https:\/\/peoplesfood.coop\/newsite\/2015\/07\/11\/rustic-gazpacho\/","title":{"rendered":"Rustic Gazpacho"},"content":{"rendered":"<p class=\"mobileTitle page-section-title\"><strong><\/strong><\/p>\n<div class=\"entry\">\n<h2>Ingredients<\/h2>\n<ul>\n<li>2 pounds ripe tomatoes, cored and diced<\/li>\n<li>1 medium cucumber, seeded and diced<\/li>\n<li>1 large green bell pepper, seeded and diced<\/li>\n<li>1 cup jicama (about 1\/2 of a large jicama), peeled and diced<\/li>\n<li>1 small jalape\u00f1o pepper, seeded and minced (more if you like things hot!)<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1 1\/2 cup tomato or vegetable juice<\/li>\n<li>1 1\/2 limes, juiced (about 1\/4 cup juice)<\/li>\n<li>1 tablespoon sherry vinegar (or red wine vinegar)<\/li>\n<li>1 teaspoon salt (optional)<\/li>\n<li>Ground black pepper to taste<\/li>\n<li>1 avocado, peeled, seeded, and diced (prep avocado just before serving the gazpacho to prevent browning)<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<p>In a large mixing bowl, stir all ingredients together except for the avocado. For optimal flavor, allow the mixture to sit for a couple hours to allow the flavors to blend. Stir in the avocado just before serving.<\/p>\n<h2>Serving Suggestion<\/h2>\n<p>Serve with crusty bread and additional hot sauce, if desired.
