{"id":20298,"date":"2026-06-30T21:26:44","date_gmt":"2026-07-01T01:26:44","guid":{"rendered":"https:\/\/peoplesfood.coop\/newsite\/?p=20298"},"modified":"2026-06-30T21:26:44","modified_gmt":"2026-07-01T01:26:44","slug":"garlic-poached-mushrooms-with-fresh-basil","status":"publish","type":"post","link":"https:\/\/peoplesfood.coop\/newsite\/2026\/06\/30\/garlic-poached-mushrooms-with-fresh-basil\/","title":{"rendered":"Garlic Poached Mushrooms with Fresh Basil"},"content":{"rendered":"<p>By: Co+op,<br \/>\nReprinted with permission from grocery<\/p>\n<p>Recipe Information<br \/>\nTotal Time: 60 minutes; 15 minutes active<br \/>\nServings: 4<\/p>\n<p>These poached mushrooms make a delicious appetizer on their own or as part of an antipasto platter.<\/p>\n<p>Ingredients<br \/>\nMushrooms<br \/>\n    1 pound small white button mushrooms<br \/>\n    1 quart water<br \/>\n    2 cloves garlic, peeled and smashed<br \/>\n    1 bay leaf<br \/>\n    1 tablespoon lemon juice<\/p>\n<p>Dressing<br \/>\n    3 tablespoons balsamic vinegar<br \/>\n    3 tablespoons extra virgin olive oil<br \/>\n    1 tablespoon fresh basil, chopped<br \/>\n    1\/2 teaspoon minced garlic<br \/>\n    Pinch of white pepper<br \/>\n    Pinch of salt<br \/>\n    1\/2 teaspoon tamari (optional)<\/p>\n<p>Preparation<br \/>\nWash mushrooms, remove stems, and set aside. In a deep saucepan, combine the water, bay leaf, lemon and 2 smashed cloves of garlic and bring to a boil. Add mushrooms, bring to a rolling simmer and poach until the mushrooms are tender, approximately 3-5 minutes. Remove the mushrooms from the pot, drain well and cool in refrigerator for 30 minutes. In a stainless steel bowl, whisk together balsamic vinegar, olive oil, basil, garlic, pepper and tamari (optional). Add the cooled mushrooms and toss to coat. Let stand 15-30 minutes for flavor to develop, tossing occasionally.<\/p>\n<p>Serving Suggestion<br \/>\nCreate an antipasto platter starring these poached mushrooms, along with semi-hard cheeses like smoked Gouda or dill Havarti, and slices or cubes of hard salami. The mushrooms can be made a day in advance and stored in the refrigerator.
