Chia seeds thicken the sweet watermelon puree and add minerals, omega-3 fatty acids, fiber and antioxidants. Creamy vanilla yogurt makes the parfait into a protein-rich treat.<\/p>\n<p>Ingredients<br \/>\n    4 cups seedless watermelon, cubed<br \/>\n    1\/2 cup chia seeds<br \/>\n    2 tablespoons honey<br \/>\n    1 tablespoon lemon juice<br \/>\n    1 1\/2 cups vanilla yogurt<br \/>\n    1 1\/2 cups fresh raspberries<br \/>\n    Mint sprigs, for garnish<\/p>\n<p>Preparation<br \/>\n    1. Put the watermelon cubes in a blender container and blend until smooth. Add chia seeds, honey and lemon and pulse until mixed. Transfer to a storage container and refrigerate until thickened, about an hour.<br \/>\n    2. In six 8-ounce juice glasses or wine goblets, measure \u00bc cup of the watermelon mixture, then top each with \u00bc cup of yogurt and \u00bc cup of watermelon, then top with \u00bc cup raspberries.<br \/>\n    3. Garnish with mint and serve.<\/p>\n<p>Serving Suggestion<br \/>\nServe for breakfast on a hot summer morning or as a refreshing snack.
