{"id":20005,"date":"2026-04-06T14:29:58","date_gmt":"2026-04-06T18:29:58","guid":{"rendered":"https:\/\/peoplesfood.coop\/newsite\/?p=20005"},"modified":"2026-04-06T14:29:58","modified_gmt":"2026-04-06T18:29:58","slug":"wheatberry-and-apple-salad","status":"publish","type":"post","link":"https:\/\/peoplesfood.coop\/newsite\/2026\/04\/06\/wheatberry-and-apple-salad\/","title":{"rendered":"Wheatberry and Apple Salad"},"content":{"rendered":"<p>By: Co+op,<br \/>\nReprinted with permission from grocery<\/p>\n<p>Recipe Information<br \/>\nTotal Time:<br \/>\n2 hours<br \/>\nServings:<br \/>\n6<\/p>\n<p>Chewy and nutty in flavor, wheat berries (the grain of whole wheat) pack in the fiber in this sweet and tangy salad that&#8217;s sure to please.<\/p>\n<p>Ingredients<br \/>\n    1 cup dry wheatberries<br \/>\n    1\/4 cup walnuts, toasted and chopped<br \/>\n    1\/2 cup dried cranberries<br \/>\n    3 scallions, sliced<br \/>\n    2 celery ribs, diced<br \/>\n    1 Granny Smith apple, cored and cubed<\/p>\n<p>Dressing<br \/>\n    1\/2 cup light mayonnaise<br \/>\n    1\/3 cup sour cream (or plain yogurt)<br \/>\n    2 tablespoons red wine or rice vinegar<br \/>\n    3 tablespoons apple juice<br \/>\n    salt and pepper to taste<\/p>\n<p>Preparation<br \/>\n    1. Bring 3 cups of water to a boil, then stir in the wheatberries and 1\/2 teaspoon salt. Reduce the heat to a simmer and cook the wheatberries, uncovered, for 1 1\/4 -1 1\/2 hours until tender and chewy. Drain the wheatberries in a colander and cool. Wheatberries can be cooked and stored in the refrigerator for up to three days to reduce your preparation time to 30 minutes.<br \/>\n    2. In a mixing bowl, combine the mayonnaise, sour cream (or yogurt), vinegar, and apple juice. Mix the dressing with the cooled wheatberries, walnuts, cranberries, scallion, celery, and apple.
