{"id":19712,"date":"2025-12-15T18:16:38","date_gmt":"2025-12-15T23:16:38","guid":{"rendered":"https:\/\/peoplesfood.coop\/newsite\/?p=19712"},"modified":"2025-12-15T18:16:38","modified_gmt":"2025-12-15T23:16:38","slug":"brined-pork-chops-with-gingered-apples","status":"publish","type":"post","link":"https:\/\/peoplesfood.coop\/newsite\/2025\/12\/15\/brined-pork-chops-with-gingered-apples\/","title":{"rendered":"Brined Pork Chops with Gingered Apples"},"content":{"rendered":"<p>By: Co+op<br \/>\nReprinted with permission from grocery.<\/p>\n<p>&nbsp;<\/p>\n<div class=\"content-block\">\n<div class=\"group-rec-info field-group-div\">\n<h3 class=\"print-no\">Recipe Information<\/h3>\n<div class=\"field-label-inline\">\n<h3 class=\"label-inline field-label\">Total Time:<\/h3>\n<p>45 minutes active; 4-6 hours to brine<\/p><\/div>\n<div class=\"field-label-inline\">\n<h3 class=\"label-inline field-label\">Servings:<\/h3>\n<p>4<\/p><\/div>\n<\/div>\n<\/div>\n<div class=\"field_video\"><\/div>\n<div class=\"field field-name-body view-mode-full\">\n<div class=\"post-body-content\">\n<p>These succulent, flavorful pork chops are made even more so with the addition of gingered apples.<\/p>\n<\/div>\n<\/div>\n<div class=\"field field-name-field-recipe-ingred view-mode-full\">\n<h2>Ingredients<\/h2>\n<ul>\n<li>4 bone-in thick-cut pork chops<\/li>\n<li>1 tablespoon vegetable oil<\/li>\n<\/ul>\n<h3>Gingered Apples<\/h3>\n<ul>\n<li>1 tablespoon butter<\/li>\n<li>1 large yellow onion, diced<\/li>\n<li>2 large apples, peeled, cored, and sliced into bite-sized pieces<\/li>\n<li>1 tablespoon fresh ginger, minced<\/li>\n<li>1 cup white wine<\/li>\n<li>1\/2 cup water<\/li>\n<li>1 teaspoon spice rub (see below)<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<h3>Spice Rub<\/h3>\n<ul>\n<li>2 teaspoons paprika<\/li>\n<li>1 teaspoon ground coriander<\/li>\n<li>1 teaspoon ground cumin<\/li>\n<li>1 teaspoon garlic powder<\/li>\n<li>1 teaspoon ground cinnamon<\/li>\n<li>1\/2 teaspoon each salt and ground black pepper<\/li>\n<\/ul>\n<h3>Brine<\/h3>\n<ul>\n<li>2 tablespoons table salt<\/li>\n<li>1\/4 cup brown sugar<\/li>\n<li>4 cups water<\/li>\n<li>6-8 ice cubes<\/li>\n<\/ul>\n<\/div>\n<div class=\"field field-name-field-recipe-prep view-mode-full\">\n<div>\n<h2>Preparation<\/h2>\n<ol>\n<li>Mix the brine ingredients in a large container, and submerge the pork chops in brine. Cover and refrigerate for 4 to 6 hours. Prepare spice rub while the pork is brining (reserving 1 teaspoon to season the apples). Remove the chops from the brine and blot dry with paper towels. Rub with spice rub and set aside.<\/li>\n<li>Heat 1 tablespoon butter in a large skillet over medium heat. Saute the onions until softened, then add apples, ginger, wine, water, 1 teaspoon of spice rub, and a pinch of salt. Cook for about 15 minutes until apples are soft. Turn off the heat and reserve.<\/li>\n<li>While the apples cook, heat 1 tablespoon vegetable oil in an extra large skillet over medium-high heat. Place the pork chops in the pan and cook for about 4-5 minutes per side until well browned. Reduce heat to medium-low, cover skillet and cook for a few more minutes. Use a thermometer to test the pork chops and remove them from\u00a0the pan when they reach 155\u00b0F.<\/li>\n<li>Add the applesauce to the skillet and heat through, scraping up the\u00a0bits off the bottom of the pan.
