By sauteing and then braising with stock, the kale stays mild and tender, and a shot of lemon and red chili complements the appealing hint of bitterness in kale.<\/p>\n<p>Ingredients<br \/>\n    1 bunch kale, stems removed, coarsely chopped<br \/>\n    3 tablespoons extra virgin olive oil<br \/>\n    3 cloves garlic, sliced<br \/>\n    1\/2 teaspoon red pepper flakes (optional)<br \/>\n    1\/2 cup vegetable stock or water<br \/>\n    2 tablespoons lemon juice<br \/>\n    1\/2 teaspoon salt<\/p>\n<p>Preparation<br \/>\n    1. In a large skillet over medium-high heat, pour the olive oil and after about a minute, add the garlic. Stir until the garlic is fragrant, but not browned, about a minute.<br \/>\n    2. Add the kale a handful at a time, stirring and turning in the pan. Add the red pepper flakes, if using, and stir, then add the vegetable stock or water and bring to a boil.<br \/>\n    3. Cover the pan and let simmer, reducing the heat to medium-low, for about four minutes.<br \/>\n    4. Uncover the pan, stir in the lemon juice and salt, and cook until the pan is nearly dry and the kale is tender, about four minutes.<br \/>\n    5. Serve hot or at room temperature.
