{"id":18632,"date":"2024-12-16T18:36:53","date_gmt":"2024-12-16T23:36:53","guid":{"rendered":"https:\/\/peoplesfood.coop\/newsite\/?p=18632"},"modified":"2024-12-16T18:36:53","modified_gmt":"2024-12-16T23:36:53","slug":"maple-cranberry-chicken-4","status":"publish","type":"post","link":"https:\/\/peoplesfood.coop\/newsite\/2024\/12\/16\/maple-cranberry-chicken-4\/","title":{"rendered":"Maple Cranberry Chicken"},"content":{"rendered":"<p>By: Co+op<br \/>\nReprinted with permission from grocery.coop<\/p>\n<p>Recipe Information<br \/>\nTotal Time: 20 minutes<br \/>\nServings: 4<\/p>\n<p>These delicious, festive cranberry-topped chicken breasts are a delightfully easy alternative to turkey.<\/p>\n<p>Ingredients<br \/>\n    4 6-oz. chicken breast halves, boneless and without skin<br \/>\n    1 teaspoon dried thyme<br \/>\n    1\/4 teaspoon coarse salt<br \/>\n    1\/2 teaspoon coarsely ground black pepper<br \/>\n    1 tablespoon extra virgin olive oil<br \/>\n    2 cups cranberries, fresh or frozen<br \/>\n    1\/4 cup maple syrup<br \/>\n    1\/2 teaspoon dried rosemary<br \/>\n    1\/2 teaspoon salt<\/p>\n<p>Preparation<br \/>\n    1. Pat the chicken breasts dry and sprinkle with thyme, coarse salt and pepper. Place a large saute pan over medium-high heat and drizzle with the olive oil. Place the chicken breasts in the pan and sear for about 2 minutes, then flip the chicken and reduce the heat to medium low. Cover the pan to cook the chicken all the way through, about 4 to 5 minutes, depending on the thickness of the breasts.<br \/>\n    2. While the chicken cooks, combine the cranberries, maple syrup, rosemary and salt in a small saucepan and place over high heat. When the berries start to pop and boil, reduce to medium-low heat and stir frequently until all the berries are popped and the sauce is thick, about 5 minutes. Remove from heat and keep warm.<br \/>\n    3.
