{"id":16676,"date":"2023-07-24T19:19:31","date_gmt":"2023-07-24T23:19:31","guid":{"rendered":"https:\/\/peoplesfood.coop\/newsite\/?p=16676"},"modified":"2023-07-24T19:19:31","modified_gmt":"2023-07-24T23:19:31","slug":"cantaloupe-carpaccio","status":"publish","type":"post","link":"https:\/\/peoplesfood.coop\/newsite\/2023\/07\/24\/cantaloupe-carpaccio\/","title":{"rendered":"Cantaloupe Carpaccio"},"content":{"rendered":"<p>By: Co+op<br \/>\nReprinted with permission from grocery.coop<\/p>\n<p>Recipe Information<br \/>\nTotal Time: 15-20 minutes<br \/>\nServings: 4<\/p>\n<p>Thinly sliced cantaloupe is drizzled with a light vinaigrette and Parmesan cheese in this delightful appetizer.<\/p>\n<p>Ingredients<br \/>\n    1\/2 medium-large cantaloupe<br \/>\n    2 tablespoons shallots, peeled and minced<br \/>\n    1\/2 lemon, juice and zest<br \/>\n    2 tablespoons balsamic vinegar<br \/>\n    3 tablespoons olive oil<br \/>\n    1 tablespoon honey<br \/>\n    Pinch of salt and black pepper<br \/>\n    2 ounces Parmesan cheese<\/p>\n<p>Preparation<br \/>\n   1. Remove the rind and seeds from the cantaloupe. Cut into 3 or 4 wedges, and then, using a sharp knife or vegetable peeler, cut each wedge into long, thin slices. Lay the slices out on a large plate or platter or divide evenly between small salad plates.<br \/>\n   2. In a small bowl, whisk together the shallots, lemon juice and zest, balsamic vinegar, olive oil, honey, salt, and pepper. Drizzle the dressing over the sliced cantaloupe. Using a vegetable peeler, shave Parmesan cheese into thin curls or slices. Top the dressed cantaloupe with the shaved Parmesan cheese and serve immediately.<\/p>\n<p>Serving Suggestion<br \/>\nAccompany melon carpaccio with bowls of chilled gazpacho for a special warm weather lunch.
