{"id":16413,"date":"2023-05-15T19:36:09","date_gmt":"2023-05-15T23:36:09","guid":{"rendered":"https:\/\/peoplesfood.coop\/newsite\/?p=16413"},"modified":"2023-05-15T19:37:13","modified_gmt":"2023-05-15T23:37:13","slug":"german-new-potato-salad","status":"publish","type":"post","link":"https:\/\/peoplesfood.coop\/newsite\/2023\/05\/15\/german-new-potato-salad\/","title":{"rendered":"German New Potato Salad"},"content":{"rendered":"<p>By: Co+op<br \/>\nReprinted with permission from grocery.coop<\/p>\n<p>Recipe Information<br \/>\nTotal Time: 30 minutes<br \/>\nServings: 6<\/p>\n<p>Serve this version of southern Germany&#8217;s popular \u201cKartoffelsalat&#8221; alongside grilled meats or hearty grilled tempeh.<\/p>\n<p>Ingredients<br \/>\n    2 pounds small red-skinned potatoes<br \/>\n    1 1\/2 cups yellow onion, minced<br \/>\n    1\/4 pound uncooked bacon, diced, or 1\/4 cup soy-based vegetarian bac\u2019un bits<br \/>\n    1 tablespoon vegetable oil (if using vegetarian bac\u2019un bits)<br \/>\n    1\/2 cup vegetable stock<br \/>\n    1\/4 cup apple cider vinegar<br \/>\n    2 tablespoons whole grain mustard<br \/>\n    1\/2 cup freshly chopped parsley<br \/>\n    Salt and pepper to taste<\/p>\n<p>Preparation<br \/>\n   1. In a large pot, boil the potatoes in salted water 14\u201315 minutes, until just tender. Drain, and when cool enough to handle, cut the potatoes into 1\/4-inch slices or 1-inch cubes and place into a mixing bowl.<br \/>\n   2, If using bacon, saute the bacon in a large skillet for 4\u20135 minutes while the potatoes are cooking,, drain off most of the fat, and return the pan to the stove. Add the onions and saute another 7\u20138 minutes. Add the stock, vinegar, and mustard and simmer for a few more minutes.<br \/>\n   3. For a vegetarian potato salad, saute the onions in 1 tablespoon of vegetable oil for 7\u20138 minutes. Add the stock, vinegar, and mustard and simmer for a few more minutes.<br \/>\n   4. Toss the hot dressing with the sliced potatoes.
