{"id":15339,"date":"2022-07-25T20:00:00","date_gmt":"2022-07-26T00:00:00","guid":{"rendered":"https:\/\/peoplesfood.coop\/newsite\/?p=15339"},"modified":"2022-07-25T20:09:22","modified_gmt":"2022-07-26T00:09:22","slug":"15339","status":"publish","type":"post","link":"https:\/\/peoplesfood.coop\/newsite\/2022\/07\/25\/15339\/","title":{"rendered":"Zucchini Pesto \u201cPasta\u201d"},"content":{"rendered":"<p>By: Co+op<br \/>\nReprinted with permission from grocery.coop<\/p>\n<p>Recipe Information<br \/>\nTotal Time: 20 minutes<br \/>\nServings: 4<\/p>\n<p>Try this fresh delicious twist on pesto pasta, featuring zucchini \u201cnoodles\u201d and almond-basil pesto. <\/p>\n<p>Ingredients<br \/>\n    1\/3 cup unsalted almonds<br \/>\n    1\/2 cup olive oil<br \/>\n    6 to 8 cloves of garlic, peeled<br \/>\n    3 packed cups fresh basil leaves, stems removed<br \/>\n    1\/2 cup grated Parmesan cheese (optional)<br \/>\n    1 tablespoon lemon juice<br \/>\n    3 pounds zucchini<br \/>\n    1 cup halved cherry tomatoes<br \/>\n    Salt and black pepper to taste<\/p>\n<p>Preparation<br \/>\n    1.Using a blender or food processor, process the almonds, olive oil and garlic until they form a slightly-chunky paste. Blend the basil leaves into the almonds, olive oil and garlic, adding in small batches, until it forms a thick smooth paste. Blend in the grated Parmesan cheese and lemon juice until desired consistency and add salt to taste.<br \/>\n   2. Peel the zucchini and cut each in half lengthwise. Hold one half with one hand and use the tip of a spoon to scoop out the seeds. Repeat the process for all the zucchini.<br \/>\n   3. Using a julienne peeler or spiralizer, slice the zucchini into long, thin strips or spirals. Place zucchini \u201cnoodles\u201d into a large bowl. Toss the zucchini noodles with the basil pesto, adding the cherry tomatoes before serving.<\/p>\n<p>Serving Suggestion<br \/>\nA fresh and delicious twist on pesto pasta (with no wheat and no cooking required) is equally tasty as a salad course or a light lunch.
